Last night I saved the game multiple times to make sure it worked out and went to bed.... but this morning I cant access the save without the game crashing!

Yes! I just had something like this happen to me today. Go to your Documents\Paradox Interactive\Stellaris\logs folder and open up game.log. Scroll to the bottom. You should see whatever event caused the crash. (Actually, the whole log may just be a spam of identical entries except for the attempt number.)

My game keeps suddenly crashing on a certain date in all of my Stellaris games. Rerolling to a previous save, even if it was 5-10 years before the crash date, will still cause the game to crash on that specific date. The date changes between different playthroughs though.
