The main difference is in the fact that 1440p is still a 16:9 ratio whereas UW is 21:9. 1440p can generally just be achieved just with an ini setting. For 21:9 you usually need a mod like TrueBy9 since SSE does not support anything greater than 16:9. For Skyrim you have to edit your config files to get the game to open at this resolution but it’s not difficult.
