IMO, Target and Northdown are excellent hops. I've only used them for bittering additions, so far. If you factor the AA% of the hop, and know what the AA% of what you have on hand is, you can use the proper amount to get to your goal. Software makes it damned easy, and knowing your ingredients is key.
