Dark mage/Pyro is amazing but also sort of turns the game into easy mode. 40 Int and 40 faith and a dark infusion on your preferred weapon and you'll lrobs wipe the floor with the game. I think pryo is a difficult first-time build because it requires very careful stat and resource management.

Greatshields have high stability. There isn't much difference between dex and str builds when it comes to pyromancers. Int and faith are clearly better with dex owing to weapon buffs but pyro doesn't have that utility. Pyromancer also starts with low dex so it can work efficiently as a str build.

Witches lock is good for 1v1 PvP but I've found it very difficult for dealing with multiple opponents. For invasions and PvE I'll use a dark longsword (out damages a lot of melee builds), dark rapier, chaos estoc, I have a dark axe I forget which one but it's nearly as good as the longsword, rotten ghru spear actually infuses really well, as does the falchion, chaos dagger is top notch for crits.
