Just have to keep checking every day. If that's literally all you're doing is waiting for the moose, you could spend your days moving back and forth between there and the Desolation Point moose spawn. It's a short enough trip that you could easily make it there and back in a day, or just camp out there and return the next day, rinse, repeat.
